Edamame Salad

  • 2 LBS Edamame Soy Beans
  • 1 Cup Medium Red Onion, finely diced
  • 1/2 Cup Cilantro, rough chop
  • 1 Cup Cut Corn
  • 1 Cup Red Bell Pepper, chopped
  • 1/4 Cup Carrots, sliced in half moons
  • 1 tsp Fresh Garlic, chopped
  • 1 TBSP Fresh Ginger, minced
  • 3/4 Cup Canola Oil
  • 1/4 Cup Rice Wine Vinegar
  • 1 TBSP Honey
  • Salt and Pepper to taste

Directions:  Combine all ingredients, mix well and refrigerate.  Serve chilled.
