Yields 3 dozen, Serves 18

3/4  cup   WATER  

2  ounces   SALTED BUTTER  

3/4  cup   ALL PURPOSE FLOUR  

1/4  teaspoon   IODIZED SALT  


Pinch        CAYENNE PEPPER  

3  each   EGGS  

4  ounces   GRUYERE CHEESE,   shredded

2  each   GREEN ONIONS,   finely chopped

Cooking Instructions

Bring water and butter to a boil in a heavy saucepan over medium heat.  Add flour, salt, ground black pepper, and cayenne; cook, beating with a spoon, until mixture leaves sides of pan and forms a smooth ball of dough.  Remove from heat, and cool for 5 minutes.  Add eggs, 1 at a time, beating well, with a spoon after each addition.  Beat in cheese and green onions.  Drop dough by rounded teaspoonfuls 2 inches apart onto lightly greased baking sheets.  Bake at 400 for 20 to 25 minutes or until golden.  (Puffs will be moist in center.)  Serve puffs warm or at room temperature.
